Popular since the late 19th century, the origins of the drink are somewhat unclear, but it is believed to have been first created somewhere between the 1860s and 70s.
The drink consists of gin, lemon juice, sugar, and carbonated water. The name "Tom Collins" is thought to have originated from a hoax that was popular in the United States in the 1870s, in which people would tell their friends that a man named Tom Collins was talking badly about them, and then direct them to a bar in search of the fictional man. It is believed the prank eventually gave rise to the use of the name "Tom Collins" for the cocktail.
As the gin scene has grown, so has the increasing popularity of this all time classic cocktail. We especially love a Tom Collins with Elsewhere Gin - North Canterbury or Scapegrace Gold.
