Emily’s Garden Gin celebrates the second of the Waikino Hotel’s resident spirits, a little girl who died after falling into the Ohinemuri River, and is crafted entirely from botanicals foraged or grown on the hotel ground.
Botanicals: Juniper, Sage, Rosemary, Thyme, Oregano, Rimu Frond, Makrut Lime Leaf, Bay Leaf & Horopito
Serving Suggestion: Enjoy with Fever-Tree Mediterranean Tonic Water and a slice of lemon.

Ingredients
- 60ml Emily's Garden Gin
- 30ml Lime Juice
- 15ml Simple Syrup
- 7 Mint Leaves
- Ice
Steps
- Add the gin, lime juice, simple syrup, and six of the mint leaves to a shaker filled with ice and shake until well chilled
- Strain into a chilled coupe glass
- Garnish with the last mint leaf
