• 30ml Gin
  • 15ml Simple Syrup
  • 15ml Lime Juice
  • 100ml Prosecco or Sparkling Wine
  • Fever-Tree Premium Soda Water
  • 6 Cucumber Slices
  • 2 Cucumber Ribbons
  • 2 Mint Sprigs
  • Ice


  1. Muddle the cucumber slices and one of the mint sprigs in a shaker
  2. Add the gin, simple syrup, and lime juice, fill with ice and shake until well chilled
  3. Strain into a chilled highball tumbler or wine glass filled with ice cubes
  4. Top up with the prosecco and a dash of soda water
  5. Stir gently and then garnish with the cucumber ribbons and other mint sprig
