Named after Thomas Dakin, who began producing gin in Warrington in the second half of the 18th century, founding what would later become Greenall's. He was a pioneer who made gin of a surprising quality for the day, and who is rightly celebrated.

- 60ml Thomas Dakin Gin
- 1 Lemon Half
- 1 Lemon Wedge
- 10ml Sugar Syrup
- Fever-Tree Premium Soda Water
- Ice
Steps
- Pour the gin into a highball glass filled with ice
- Squeeze over and the drop in the lemon half
- Add the sugar syrup and stir thoroughly
- Top up with the soda water
- Garnish with the lemon wedge
