One of only a few distilleries worldwide to produce botanical spirits from surplus bread and bakery products, and the first in Aotearoa, Dunedin Craft Distillers was started by two women with a shared sense of humour and care for the environment, with the aim of reducing food waste.

They brew and ferment their own base spirit in their 500L reflux column still, Hildegard, before filtering and final flavour distillation in small batch 25L pot stills, with the equivalent of two loaves of bread going into each 500ml bottle of spirit.
